Low carbohydrate desserts #1: Lemon Poppy seed muffins

lemonpoppyseedPain doesnt hurt presents: Lemon poppy seed muffins low carbohydrate desserts style. Imagine having these treats after a meal while still being in ketosis? Good enough to have a girl over at yours and for the girls, good enough to get a man to win your heart…If you mix whip cream with it. Anyway, let’s begin the low carb recipes from my ketogenic weight loss plan book you can check out for yourself here

 

prep time: 10 minutes

cook time: 25 minutes

servings: 12

Ingredients:

1 cup almond flour

2/3 cup coconut flour

1 teaspoon baking powder

1 pinch salt

2 tablespoons agave syrup

2 tablespoons poppyseeds

3 eggs

4 tablespoons coconut oil

1 lemon, juice and zested

The how to:

  1. In a large bowl mix the eggs, the coconut oil, agave syrup, lemon juice and zest
  2. Stir in the coconut flour, baking powder, almond flour, salt and poppy seeds. Mix the fudge out of it.
  3. Spoon the batter in 12 muffin cups lined with muffin papers and bake in preheated oven at 350F for 20-25 minutes or until golden brown and fragrant
  4. Let them cool in the pan before serving

Nutritional information per serving:

Protein: 4.6g

Carbs: 9.6g

Fats: 11.6g

Calories: 157
