PALEO SLOW COOKER RECIPE: ROASTED RED PEPPER AND SPINACH FRITTATA

 

Frittata has Spanish origins and it’s very similar to an omelet, but it uses more vegetables, it’s creamy and the flavors are more intense unlike omelets which tend to be much simpler, with fewer ingredients, focusing more on the eggs than the additional ingredients.

Prep time: 15 minutes

Cook time: 6 hours

Servings: 6

Ingredients:

6 eggs, beaten

1 sweet potato, peeled and diced

2 cups baby spinach leaves

2 red bell peppers, roasted (canned)

½ cup cherry tomatoes, quartered

1 pinch smoked paprika

1 teaspoon dried basil

Salt, pepper to taste

Directions:

  1. Mix all the ingredients in your slow cooker.

  2. Cover with its lid and cook on low settings for 6 hours.

  3. Serve slightly warm, sliced, topped with a fresh salad if you want or just a few tomato slices.
